The cost of a carton of eggs (12) in the state of California is now $3.16, up from $1.18 a year ago, and in some parts of the Golden State the price is as high as $5.
It is reported by the Wall Street Journal that the Iowa State University Egg Industry Center says retail egg prices in the state are actually 66 percent higher than in other regions of the West. Also, national wholesale egg prices rose 35 percent during the holiday season.
Over the past several months, there has been a surge in egg demand because since the price of meat is skyrocketing, American consumers are seeking out other high-protein alternatives. The United States Department of Agriculture (USDA) estimates egg consumption per capita could reach its highest since 1993.
For the economists and analysts who fear the United States is in a deflationary environment, will those egg consumers wait another year to start buying eggs again?
